Fancy a burger? On a diet? Go on have one. As long as it’s this one. Succulent, juicy and delicious you will simply not believe this is the kind of food you can eat on a diet.
Minty Lamb Burgers
Ingredients:
2 tablespoon Mint jelly
4 tablespoon Dry wholemeal breadcrumbs
350 g/12 oz Lean lamb mince
1 Medium onion, finely chopped
Salt and pepper
For the dressing:
1 tablespoon Mint jelly, softened
1 tablespoon Chopped fresh mint
4 tablespoon Low-fat natural fromage frais
5-cm/2-inch Cucumber, finely diced
To serve:
Lettuce leaves
Small piece of cucumber, sliced
2 Large tomatoes, sliced
4 Wholemeal baps, split
Procedure:
Place the lamb in a large bowl and mix in the onion, breadcrumbs and mint jelly. Season well with salt and pepper, then mould the ingredients together with your hands to form a firm mixture.
Divide the mixture into 4 portions and form each portion into a round measuring 10 cm/4 inches across. Place the rounds on a plate lined with baking paper and leave to chill in the refrigerator for 30 minutes.
Preheat the grill to medium. Line a grill rack with foil, securing the ends under the rack, and place the burgers on top. Cook for 8 minutes, then turn the burgers over with a spatula and cook for a further 7 minutes, or until the burgers are cooked through.
Meanwhile, make the dressing. Mix the fromage frais, mint jelly, cucumber and chopped mint together in a small bowl. Cover with cling film and leave to chill until required.
Drain the burgers on kitchen paper and serve inside baps with sliced tomatoes, cucumber, lettuce and the dressing.
