Fruity Rice Salad
Ingredients:
3 Sticks celery
125 g/4 oz Skinless chicken breast
125 g/4 oz Ready-to eat dried dates
125 g/4 oz Ready-to-eat dried apricots
175 g/6 oz Mixed basmati and wild rice
300 ml/1/2 pint Chicken or vegetable stock
For the dressing:
4 tablespoon Lemon juice
2 tablespoon Sunflower oil
1 tablespoon White wine vinegar
1 teaspoon Dijon mustard
2 teaspoon Clear honey, warmed
Freshly ground black pepper
To garnish:
6 spring onions
Sprigs of fresh coriander
Procedure:
Place the rice in a pan of boiling salted water and cook for 15-20 minutes or until tender. Rinse thoroughly with boiling water and reserve.
Meanwhile wipe the chicken and place in a shallow saucepan with the stock.
Bring to the boil, cover and simmer for about 15 minutes or until the chicken is cooked thoroughly and the juices run clear.
Leave the chicken in the stock until cool enough to handle, then cut into thin slices.
Chop the apricots and dates into small pieces. Peel any tough membranes from the outside of the celery and chop into dice. Fold the apricots, dates, celery and sliced chicken into the warm rice.
Make the dressing by whisking all the ingredients together in a small bowl until mixed thoroughly. Pour 2-3 tablespoons over the rice and stir in gently and evenly. Serve the remaining dressing separately.
