If you love dining out and eating in Chinese restaurants, you may want to try cooking this wonderful recipe by yourself. It’s easy to prepare and it could turn out better than takeout.
Sweet and Crispy Chinese Lemon Chicken
Ingredients:
10 1/2 oz Skinless, boneless chicken breast
Chopped fresh herbs, to garnish
For the marinade:
1 tablespoon Corn flour
1 tablespoon Light soy sauce
5 fl oz Freshly squeezed lemon juice
Preparation:
Lightly rinse the chicken and pat dry with kitchen paper. Cut into bite-sized cubes and place in a shallow dish.
Mix the lemon juice and soy sauce together in a bowl. Put the corn flour in another bowl and stir in the lemon and soy mixture to form a paste. Spread over the chicken and leave to marinate for 15 minutes.
Heat a non-stick frying pan and add the chicken and marinade. Cook, stirring, for 10-12 minutes, or until the chicken is thoroughly cooked. Transfer to 4 serving plates, pour over the sauce and serve garnished with fresh herbs.
* Serves 4.
Chinese Lemon Chicken is best served with rice. What’s more, you can add vegetables to it like bell peppers, etc. Happy eating!
