If you’re conscious of the extra fat in your diet, this is one of the best option for a healthy meal. Gingered Cod Steaks are grilled so you don’t have to worry about unwanted cholesterol, plus it has vegetables so it’s a real nutritious treat.
Nutritious Gingered Cod Steaks
Ingredients:
4 Spring onions
1 oz Half-fat butter
6 oz Thick Cod steaks
1 tablespoon Soft brown sugar
2 teaspoon Freshly chopped parsley
Fresh root ginger, peeled and cut to 1-inch piece
Freshly cooked vegetables to serve
Salt and freshly ground black pepper
Preparation:
Preheat the grill and line the grill rack with a layer of tinfoil. Coarsely grate the piece of ginger. Trim the spring onions and cut into thin strips.
Mix the spring onions, ginger, chopped parsley and sugar. Add 1 tablespoon of water.
Wipe the fish steaks. Season to taste with salt and pepper. Place on four separate 20.5 x 8 x 8-inch tinfoil squares.
Carefully spoon the spring onions and ginger mixture over the fish.
Cut the butter into small cubes and place over the fish.
Loosely fold the foil over the steaks to enclose the fish and to make a parcel.
Place under the preheated grill and cook for 10-12 minutes or until cooked and the flesh has turned opaque.
Place the fish parcels on individual serving plates. Serve immediately with the freshly cooked vegetables.
Salmon is also a great substitute for cod in this recipe. You may use it whole or cut like steaks.
