This Deliciously Saucy Seafood Rice Ring is a very scenographic dish with a delicate flavor. Once baked all the ingredients compact and form a perfect donut, elegant and refined to be serve in slices.This is a new way to create an usual risotto!
Deliciously Saucy Seafood Rice Ring
Ingredients:
4 Sprigs of fresh coriander, to garnish
4 Shallots, finely chopped
8 Fresh large tiger prawns, with shells on
1/2 teaspoon Turmeric
1 teaspoon Caster sugar
1 teaspoon Dijon mustard
5 tablespoon Sunflower oil
1 tablespoon Mild curry paste
2 tablespoon White wine vinegar
2 tablespoon Freshly chopped coriander
350 g/12 oz Long-grain rice
125 g/4 oz Peeled prawns, thawed if frozen
Lemon wedges, to serve
Salt and freshly ground black pepper
Procedure:
Lightly oil a 1.1|litre/2 pint ring mould, or line the mould with cling film. Cook the rice in boiling salted water with the turmeric for 15 minutes, or until tender. Drain thoroughly. Whisk 4 tablespoons of the oil with the vinegar, mustard and sugar to form a dressing and pour over the warm rice. Reserve.
Heat the remaining oil in a saucepan, add the curry paste and shallots and cook for 5 minutes, or until the shallots are just softened. Fold into the dressed rice, season to taste with salt and pepper and mix well. Leave to cool completely.
Stir in the prawns and the chopped coriander and turn into the prepared ring mould. Press the mixture down firmly with a spoon, then chill in the refrigerator for at least 1 hour.
Invert the ring onto a serving plate and fill the center with the tiger prawns. Arrange the cooked mussels around the edge of the ring and garnish with sprigs of fresh coriander. Serve immediately with lemon wedges.
